The finest produce from the region's farmers: for your gourmet holidays in Austria
Wherever possible, the Hotel Hochschober in Austria buys the food it serves during your gourmet holiday from within the region. There is a multitude of high quality regional delicacies – many of them from organic farms. And by buying locally the short transportation routes are environmentally friendly.
Milk, yoghurt, cream cheese, butter, cheeses
Our milk is supplied by “Kärntnermilch”, who buy their
milk from local farms. Excellent yoghurts and other dairy products come from the Weißensteiner vulgo Våstl family in Saureggen.
The Pirker vulgo Tschadamer family near Liebenfels makes soft and semi-soft cheeses, Glundner cheese and butter from milk from their 100 "Schwarzbunt" cows.
Sheep and hogs
The Nuart vulgo Hafner family in Waisenberg processes
organic sheep's milk to butter, yoghurt, soft cheese, mozarella, Heuploamach cheese, white and blue mould cheese. Exclusively for the Hochschober, farmer Nuart produces
cottage cheese with apple mint. In summer we also buy organic lamb and pork here.
Goat's cheese
The town of Winklern near Mittertrixen is the home of the Skofitsch family. On their organic farm, they process sheep's and goat's milk to goat's herb roulades, goat's cottage cheese with wild garlic, goat's semi-soft cheese with olive oil, and goat's camembert.
Bread, rolls and jams
The Schieder bakery in Feldkirchen makes
"Steinofen" rolls especially for us, using part rye flour. Dagmar Hofer in Patergassen comes to the hotel once or twice a week to bake our delicious house bread, nut bread, apple bread and yeast-free rye bread. Marianne Leeb in Wernberg bakes our
Kamut bread, wholemeal spelt bread, and
amaranth bread. Frau Leeb also makes delicious jams and jellies, and more unusual preserves for us.
We buy our lush organic "Bio-Dinkel Vollwertbrot" spelt bread and gluten free buckwheat pumpkinseed bars from the J.G. Hochleitner bakery in Tamsweg.
Honey
We buy honeycomb, autumn heather honey, Alpine rose honey, dandelion honey and pollen from Herwig Garnitschnig. He lives on the Lorenzenberg Mountain high above Ebene Reichenau. As a professional full time beekeeper he looks after 300 to 400 beehives.
Fruit and berries
Fruit farmer Schinnerl from St. Ruprecht an der Raab supplies us with seasonal fruit and berries some of which we turn into jams.
Apple cider and Süßmost fruit juices
The Lavanttal Valley is home to the Stocker vlg. Frankl family. Here, high quality apple varieties (Großer Brunner, Boskop, Bohnapfel, Erbach-Hofer) and the well-known Lavanttaler Banana apple are manufactured into Süßmost unfermented fruit juice and fermented Most cider.
Noric noodle manufacture
The Kuss family lives in the Norische region in the town of Guttaring. They specialise in hand-made pasta and noodles, which have won several awards.
Venison
Venison from bucks, stags and fawns is supplied to us by Maitrattner Jagd in Gnesau.
Fresh and smoked fish
In Neualbeck near Sirnitz, DI Markus Payr runs a fishery that supplies us with his pure
spring water trout, char, salmon trout, Carinthian Låx (brown trout), rainbow trout and arctic char.
In Wernberg near Villach, the Mattersdorfer family turn fish into delicious smoked goods. This is where we buy our smoked salmon, which we offer in several flavours, usually with Blini pancakes.
Salami, sausage meat and ham
From the little butcher’s shop Schader's in Tamsweg we buy our stag salami, salami, spiced ham, Weißwurst sausages, Leberkäse meat loaf, Karreespeck bacon, Schinkenspeck bacon and Hauswürstl sausages.
Vulcano ham from Styria
The Vulcano farmers produce an exceptionally delicious ham called Vulcanoschinken. It comes from pigs that have been fed a special diet, is air cured, and matures over a long time.
Lamb from the Zirbitzkogel Mountain
The Wernig vlg. Rodler family's organic sheep farm supplies us with lamb. Around 170 ewes and their lambs live on the farm.
